Bacon Mushroom Puffs
Ingredients
1 packages of puff pastry
6 slices bacon
2 cups mushrooms, small dice
½ yellow onion, small dice
1 clove fresh garlic, minced
2 teaspoons thyme
1 Tablespoon ketchup
2 Tablespoons white wine
1 cup shredded Swiss cheese
3 ounces of softened cream cheese
Salt and pepper to taste
Method
Preheat oven to 350 F, and allow the puff pastry to be at room temperature
Cook the bacon in a skillet and set aside. In the remaining bacon grease, cook the mushrooms, onions, garlic, and thyme with a pinch of salt and pepper until the mushrooms are tender.
Add the ketchup and stir well; let it sit and caramelize a bit, then deglaze the pan with the wine, stirring well to break up any bits on the bottom.
Let the mixture evaporate, then set aside to cool
In a large bowl, add the Swiss cheese and the cooled bacon to the softened cream cheese and mix well
If needed, drain any remaining liquid from the mushroom mixture, then add it to the cheese and mix well.
Cut the puff pastry into 2-inch squares, place a rolled-up ball of the cheese mixture (about a Tablespoon) into the puff pastry square, cover it entirely with the dough, and then roll it into a ball, and place seam side down on a well-greased cookie sheet.
Continue to roll out as many puffs as possible until you run out of dough or cheese mixture
Place the puffs about an inch apart on the cookie sheet, spray with pan release, and sprinkle salt and pepper over the tops
Bake in the oven for about 15 minutes at 350 degrees F or until golden brown.
