Black Bean, Avocado, and Quinoa Bowl

Black Bean, Avocado, and Quinoa Bowl

Ingredients

  • 1 cup of cooked quinoa

  • 1 avocado, diced

  • 5 grape tomatoes, halved

  • ½ of a peeled and diced cucumber

  • ½ a small red onion, diced

  • ½ cup corn

  • ½ cup black beans

  • Juice of 1 lime

  • 2 Tablespoons of olive oil

  • 2 Tablespoons adobo sauce

  • 1 Tablespoon Apple cider vinegar

  • ½ cup of cilantro, sliced

     

Method

  1. Place the cooked quinoa in the center of a salad bowl.

  2. Place the quinoa on the avocado, tomatoes, cucumber, red onion, corn, and beans.

  3. Mix the adobo, vinegar, lime juice, and oil into a dressing and pour over the top of the bowl ingredients.

  4. Top with sliced cilantro
