Black Bean, Avocado, and Quinoa Bowl
Ingredients
1 cup of cooked quinoa
1 avocado, diced
5 grape tomatoes, halved
½ of a peeled and diced cucumber
½ a small red onion, diced
½ cup corn
½ cup black beans
Juice of 1 lime
2 Tablespoons of olive oil
2 Tablespoons adobo sauce
1 Tablespoon Apple cider vinegar
½ cup of cilantro, sliced
Method
Place the cooked quinoa in the center of a salad bowl.
Place the quinoa on the avocado, tomatoes, cucumber, red onion, corn, and beans.
Mix the adobo, vinegar, lime juice, and oil into a dressing and pour over the top of the bowl ingredients.
Top with sliced cilantro
