Black Bean Jalapeno Burgers

Black Bean Jalapeno Burgers

Ingredients

  • 1 can of black beans, drained

  • 1 can of jalapeno peppers

  • 1 egg

  • 1 cup corn

  • 1 Tbls of Taco Seasoning*

  • 1 cup cornmeal

  • Flour as needed

  • 1 lime for garnish

Method

  1. In a large mixing bowl, mash the black beans using a fork or a potato masher.

  2. Drain the jalapeno peppers and put them into the mixing bowl.

  3. Crack an egg into the bowl and mix everything well.

  4. Add the corn, Chef Politte Chili Seasoning, and corn meal to the bowl. Mix everything well until it forms a thick mixture.

  5. Using your hands, form the mixture into small patties.

  6. Coat each patty with flour.

  7. Heat a skillet over medium-high heat. Place the patties on the skillet and cook for 2-3 minutes on each side or until golden brown.

  8. Remove from heat and let cool for a few minutes.

Garnish with lime wedges and serve on a toasted bun with your favorite toppings and condiments
