Breakfast enchiladas are a delicious meal with tortillas filled with scrambled eggs, cheese, and other ingredients. They are covered in sauce and baked until golden brown
Breakfast Enchiladas Ingredients
1 pound breakfast sausage
½ diced onion
½ diced red pepper
7 ounces green chilies
2 cups cheddar cheese
8 large eggs
10 ounce can of green chili sauce
Method
Preheat oven to 350 degrees
In a large skillet cook the sausage, onion, and red pepper
When the sausage is cooked and the onion and pepper are soft add the green chilies and stir well
Add the eggs to the pan, stir well, and cook until set
After the eggs are set, remove the pan from heat and assemble the enchiladas by rolling about ¼ cup of the mixture in the flour tortilla, roll tightly, and leave the ends open, place the filled tortilla seam side down in a 7 x 11 casserole dish or aluminum baking dish.
When all eight tortillas are in the dish, cover with the enchilada sauce, cover with cheese, and bake covered, in the oven for 20 minutes, so the cheese is melted, and the sauce is piping hot
