Breakfast Quesadilla
Ingredients
1 cup cheddar cheese
1 large 12-inch flour tortilla
1-pound spicy sausage
2 Jumbo eggs
2 Tablespoons vegetable oil
Method
Cook sausage until fully cooked and crumbled well. Set aside
After the sausage is fully cooked, cook eggs in 1 Tablespoon of the oil until fluffy.
In a large saucepan, on medium-high heat, place the rest of the oil in the pan and use the tortilla to spread the oil around; place the cheese on the top of the tortilla and let it melt. Turn off the heat.
Add the sausage and the egg to half of the tortilla, and fold it over. Slide the tortilla onto a cutting board and cut in diagonal pieces like a pizza.
Add your favorite condiments to serve with.
Serves 1 per tortilla. Makes 3 servings
