To make a Brie and Blackberry Omelet, whisk together eggs, milk, and seasoning. Pour into a hot, buttered skillet and add brie cheese and fresh blackberries. Fold the other half over and cook until the cheese is melted and the eggs are set. Serve hot and enjoy!
Brie and Blackberry Omelet
Ingredients
2 medium eggs
1 teaspoon olive oil
1/3-pint fresh blackberries
7 ounces Brie cheese
2 teaspoons honey
Method
Cut the blackberries crosswise and set in a bowl off to the side in your mise en place.
Either slice thinly or use a micro plane to grate the cheese, set this aside in your mise as well.
Break 2 eggs in a bowl a whisk until well beaten.
Heat the olive oil in a skillet over medium-high heat.
When the pan is well covered with the olive oil and hot, pour the egg mixture into the pan and move the outside into the middle of the pan until the egg is mostly set on one side.
Either with a spatula or with amazing talent, flip the egg mixture over, turn off the heat, and add the cheese and blueberries.
Turn the omelet onto a plate and drizzle the honey across the omelet.
Serve with fresh fruit and a small, toasted baguette.
