Buffalo Chicken Soup
Ingredients
2 ribs celery
2 carrots
1 onion
4 cooked chicken breasts
1 Tablespoon olive oil
1 Tablespoon butter
1 Tablespoon flour
1-ounce dry ranch seasoning mix
4 cups chicken broth
¼ cup hot sauce
8 ounces cream cheese-softened
Method
Dice the mirepoix of carrots, celery, and onions and set aside in a bowl.
Dice the cooked chicken breast and place it in a bowl.
Melt the butter and oil in a large pot over medium-high heat.
Add the mirepoix to the butter and oil and sweat until the carrots are soft.
Add the flour and ranch dressing packet into the mirepoix and butter mixture to form a roux
Keep cooking the roux until it is a peanut butter consistency and forms a slightly dark color.
Add the chicken broth and stir until well incorporated.
Add the diced chicken and the hot sauce while stirring.
Add the softened cream cheese little by little while stirring, to avoid clumps.
Let the soup simmer for 10 minutes.
Serve topped with blue cheese crumbles and sliced green onions
