Cauliflower hash browns are a healthy alternative to regular hash browns. Made with grated cauliflower, eggs, and spices, they're crispy and perfect for breakfast, brunch, or as a side dish. Serve with your favorite toppings.
Cauliflower Hash Browns
Ingredients
½-head of cauliflower
1-large egg
½ cup finely diced onion
1 cup shredded Cheddar
3 Tablespoons cornstarch
Pinch of salt and pepper
1 teaspoon red pepper flakes
1 Tablespoon olive oil
Method
Cut the cauliflower into small florets
Break the florets down with a food processor, knife or a box grater, until the cauliflower is in small tiny pieces.
Dice the onion and set aside
In a bowl, mix the onion and the processed cauliflower and mix well
Add the egg and the cheddar cheese, and mix well
Slowly add the cornstarch and mix well, add the salt, pepper, and chili flakes, and mix well
In a large skillet, add the oil and turn the pan on medium heat
Form patties with the cauliflower mixture and place them in the hot oil.
Cook on each side for about 4 minutes. Cook until the patties get a golden-brown color
Remove to a plate or platter
Serve with eggs or with an omelet, yield depends on patty size
