Cheesecake Factory Tamarind Cashew Dipping Sauce
Ingredients
1 Tablespoon white vinegar
1 teaspoon balsamic vinegar
½ teaspoon tamarind concentrate
½ cup honey
1 Tablespoon granulated sugar
1 pinch of turmeric
½ cup chopped cashews
2/3 cup chopped cilantro
2 Tablespoons minced garlic
2 green onions, sliced
1 teaspoon black pepper
1 teaspoon cumin
¼ cup olive oil
Method
Stir together both kinds of vinegar, the tamarind paste, honey, sugar, and turmeric in a small microwave-safe bowl and microwave for about one minute, or until the sugar and tamarind paste is dissolved
In a blender or food processor, puree the tamarind and vinegar mixture, the cashews, cilantro, onions, garlic, pepper, cumin, and olive oil.
Pour mixture into a bowl and refrigerate. Can be kept in a sealed container for up to three weeks
