Chickpea Salad Sandwich
Ingredients
• 1-15 ounce can of chickpeas, drained and rinsed
• ½ cup mayo
• 2 Tablespoon diced red onion
• 2 Tablespoon diced celery
• 3 Tablespoon jalapeno relish
• 1 teaspoon garlic powder
• 1 teaspoon red pepper flakes
• Salt and pepper to taste
Method
1. Place the drained and rinsed chickpeas in a large bowl and mash with a fork to the desired consistency.
2. Add the mayo, red pepper flakes, salt and pepper, onion, relish, celery, and garlic powder and mix well.
3. Refrigerate for at least an hour and serve on toast, bread, or in a wrap.
