Chipotle Queso Blanco Sauce
Ingredients
1 Tablespoon butter
½ medium onion, minced
1 serrano pepper, minced
2 chipotle peppers in adobo, minced
1 clove garlic, minced
1 teaspoon ground cumin
½ tomato deseeded, small dice
1 can of evaporated milk
3 Tablespoons cornstarch
3 Tablespoons water
1 cup sour cream
2 cups grated Jack cheese
½ cup grated white cheddar
Salt and pepper to taste
Method
In a small saucepan, melt the butter and sauté the onions, minced peppers, and tomato for about 5 minutes or until the mixture is soft
Add the garlic and cumin and stir well
Add the evaporated milk and slowly bring to a light boil
Add the water and the cornstarch to make a slurry and add it to the mixture
Stir until the mixture begins to thicken, then turn the heat to simmer
Add the cheese and stir until it blends and melts into the sauce. Continue doing this until all the cheese is blended.
Add the sour cream and stir well with a whisk.
Season with salt and pepper to taste
Serve hot with tortilla chips
