Confetti Chicken
Ingredients
1-pound chicken cutlets
1 tablespoon chili seasoning
1-can of cream chicken soup
½ cup skim milk
1 red sweet pepper, diced
1 yellow pepper, diced
1 jalapeno pepper, diced
1 cup frozen corn
1 cup cheddar cheese
sliced green onions
salt and pepper as needed
Method
Pre-heat oven to 375 degrees F
Place the chicken cutlets in a well-greased baking or casserole dish and cover with chili seasoning, salt, and pepper.
Add the soup and milk to a small bowl, mix well, then pour over the chicken.
Add the diced peppers, jalapenos, and corn.
Bake uncovered at 375 degrees F for about 35 minutes until it begins to bubble.
Remove from oven and top with cheddar cheese and sliced green onions; place back in the oven and completely melt the cheese.
Remove from oven and serve hot with cornbread.
