Ingredients

  • 1-pound mushrooms

  • 2 Tablespoons unsalted butter

  • 1 Tablespoon olive oil

  • 1 shallot, minced

  • 2 cloves of garlic, minced

  • ¼ teaspoon kosher salt

  • ½ teaspoon black pepper

  • 1 teaspoon thyme

  • ½ cup fresh parsley, chopped

  • 2 Tablespoons Marsala wine

Method

  1. Clean the mushrooms and rinse well, dry on a paper towel

  2. Chop the mushrooms into small pieces using a knife or a food processor.

  3. Heat butter in a non-stick pan over medium heat

  4. Add the shallots when the butter has melted, and cook for 3 to 4 minutes. Do not let the shallots brown.

  5. Add the garlic and stir until fragrant

  6. Increase the heat to medium-high, and add the mushrooms, salt, pepper, and thyme

  7. Stir frequently, until all the liquid is evaporated, about 3 minutes

  8. Add the Marsala, and continue cooking over medium-high heat until the liquid has evaporated

  9. Add the fresh parsley and stir until mixed well

  10. Adjust seasonings as needed
