Duxelles
Ingredients
1-pound mushrooms
2 Tablespoons unsalted butter
1 Tablespoon olive oil
1 shallot, minced
2 cloves of garlic, minced
¼ teaspoon kosher salt
½ teaspoon black pepper
1 teaspoon thyme
½ cup fresh parsley, chopped
2 Tablespoons Marsala wine
Method
Clean the mushrooms and rinse well, dry on a paper towel
Chop the mushrooms into small pieces using a knife or a food processor.
Heat butter in a non-stick pan over medium heat
Add the shallots when the butter has melted, and cook for 3 to 4 minutes. Do not let the shallots brown.
Add the garlic and stir until fragrant
Increase the heat to medium-high, and add the mushrooms, salt, pepper, and thyme
Stir frequently, until all the liquid is evaporated, about 3 minutes
Add the Marsala, and continue cooking over medium-high heat until the liquid has evaporated
Add the fresh parsley and stir until mixed well
Adjust seasonings as needed
