Haitian Pikliz

Ingredients

  • 2 cups shredded cabbage

  • 6 Habanero peppers, sliced thin

  • 1 green pepper, sliced thin

  • 1 red onion, sliced thin

  • 1 cup shredded carrot

  • 1 bunch scallions, sliced thin

  • 4 cloves garlic, minced

  • 1 Tablespoon red pepper flakes

  • 1 teaspoon kosher salt

  • 2 cups distilled white vinegar-may need more

  • 2 Tablespoon lime juice


Method

  1. In a large bowl, add all the prepped vegetables

  2. Add the salt, pepper flakes, and garlic, then squeeze the lime juice in. Mix everything well

  3. Use one or more glass jars that have lids, and place the mixture into the jars

  4. Pour in the vinegar to cover the vegetables completely

  5. Cover and refrigerate. Let the mixture marinate for 3 days before using
