Jalapeno Popper Mac & Cheese
Ingredients
¼ pound butter
2 cups flour
½ an onion, diced
4 ounces cream cheese
8 ounces cheese blend
1 small can dice jalapenos
½ box of favorite pasta
1-pound bacon
1 quart milk
1 cup chopped cilantro
Salt and pepper to taste
Method
Cook your pasta according to package directions-set aside
Slice and cook the bacon, and set aside on a paper towel, save the bacon grease
In a large saucepan, melt the butter over medium heat, add the bacon grease
Add the onion, salt, and pepper, and sweat in the butter and grease until translucent
Add the flour and make a roux, and cook until the roux has a peanut butter consistency and does not stick to the pan
Add the milk and stir until the sauce is smooth and starts to thicken
Add the cream cheese and cheddar cheese and stir in until well blended in the sauce
Add the drained jalapenos, cilantro, and diced cooked bacon and stir well
Lastly, add the cooked macaroni, salt, and pepper, and stir well
Cover and simmer for 10 minutes
