Japchae is a Korean dish made from sweet potato starch noodles stir-fried with carrots, Onions, Peppers, and sometimes meat. It has a savory flavor from soy sauce and sesame oil and is often garnished with sesame seeds.
Japchae
Ingredients:
8 oz sweet potato starch noodles
2 Tablespoons of soy sauce
2 Tablespoons of sesame oil
1 Tablespoon sugar
1 Tablespoon honey
1 Tablespoon of olive oil
4 cloves garlic, minced
1 onion, thinly sliced
1 carrot, julienned
1 red bell pepper, julienned
3 green onions, cut into 2-inch pieces
1/2 cup shiitake mushrooms, thinly sliced
Sesame seeds for garnish
Method
Soak the sweet potato starch noodles in cold water for 30 minutes. Then rinse and drain.
Mix a bowl of soy sauce, sesame oil, sugar, and honey. Set aside.
Heat vegetable oil over medium-high heat in a wok or large frying pan. Add minced garlic and sauté until fragrant.
Add onion, carrot, red bell pepper, shiitake mushrooms, and green onions. Season with salt and pepper and stir-fry until the vegetables are tender.
Add the noodles to the wok. Pour the sauce over the top and continue stir-frying until the noodles are cooked through and the sauce is evenly distributed.
Plate and garnish with sesame seeds
