Japchae

Japchae is a Korean dish made from sweet potato starch noodles stir-fried with carrots, Onions, Peppers, and sometimes meat. It has a savory flavor from soy sauce and sesame oil and is often garnished with sesame seeds.


Japchae

Ingredients:

  • 8 oz sweet potato starch noodles

  • 2 Tablespoons of soy sauce

  • 2 Tablespoons of sesame oil

  • 1 Tablespoon sugar

  • 1 Tablespoon honey

  • 1 Tablespoon of olive oil

  • 4 cloves garlic, minced

  • 1 onion, thinly sliced

  • 1 carrot, julienned

  • 1 red bell pepper, julienned

  • 3 green onions, cut into 2-inch pieces

  • 1/2 cup shiitake mushrooms, thinly sliced

  • Sesame seeds for garnish

Method

  1. Soak the sweet potato starch noodles in cold water for 30 minutes. Then rinse and drain.

  2. Mix a bowl of soy sauce, sesame oil, sugar, and honey. Set aside.

  3. Heat vegetable oil over medium-high heat in a wok or large frying pan. Add minced garlic and sauté until fragrant.

  4. Add onion, carrot, red bell pepper, shiitake mushrooms, and green onions. Season with salt and pepper and stir-fry until the vegetables are tender.

  5. Add the noodles to the wok. Pour the sauce over the top and continue stir-frying until the noodles are cooked through and the sauce is evenly distributed.

Plate and garnish with sesame seeds
