King Ranch Chicken Casserole
Ingredients
2.5 cups chopped cooked chicken
1 cup sour cream
1 large onion, diced
2 cloves garlic, minced
8 ounces tomatillo salsa Verde
Small can of green chilies
¼ cup chopped fresh cilantro
1 teaspoon ground cumin
4 cups Mexican-style cheese
8 corn tortillas
Method
Preheat the oven to 350°F.
Combine the chicken, diced onion, minced garlic, sour cream, chiles, salsa Verde, cumin, salt, and black pepper in a large mixing bowl. Mix well.
Spread half of the tortillas evenly in the bottom of a 9x13-inch baking dish. Top with half of the chicken mixture and 1 cup of shredded cheese. Repeat layers with the remaining tortillas, chicken mixture, and cheese.
Cover the dish with foil and bake for 30 minutes.
Remove the foil and bake for 10-15 minutes until the cheese is melted and bubbly.
Remove it from the oven and let it cool for a few minutes. Garnish with chopped cilantro before serving.
