Lemongrass Tofu


Lemongrass Tofu

Lemongrass tofu is a delightful dish that combines the bright, citrusy flavor of lemongrass with the subtle, creamy texture of tofu.


Lemongrass Tofu

Ingredients

  • 1 block of firm tofu

  • 2 Tablespoons avocado oil

  • 4 cloves of garlic, minced

  • 2 green onions, sliced, more for garnish

  • 1 inch knob of ginger, peeled and minced

  • ¼ cup Birds Eye chilies

  • 1 Tablespoon of ground lemongrass

  • 2 Tablespoons of liquid aminos, more if needed

  • 1 Tablespoon honey

  • Sesame oil for finishing

Method

  1. Drain the block of firm tofu and press it gently to remove excess moisture. Cut the tofu into bite-sized cubes.

  2. Heat the avocado oil over medium heat in a large skillet or wok.

  3. Add minced garlic and ginger to the skillet. Sauté for about 1-2 minutes until fragrant.

  4. Carefully add the cubed tofu to the skillet and cook for 5-7 minutes, turning occasionally, until it is golden and slightly crispy.

  5. Add the Birds Eye chilies, ground lemongrass, and sliced green onions to the skillet. Stir everything together and cook for an additional 3-4 minutes.

  6. Pour the liquid aminos and honey, stirring well to coat the tofu and vegetables. Cook for 2-3 minutes, allowing the flavors to blend.  Add more liquid aminos if the dish appears to be a bit dry during cooking.

  7. Drizzle a small amount of sesame oil over the tofu before serving for added flavor.

  8. Serve garnished with additional green onions if desired. It is well paired with rice, quinoa, or noodles.
