Maakouda-Moroccan Potato Cakes

Maakouda-Moroccan Potato Cakes

Ingredients

  • 2 cups mashed potatoes

  • 1 egg

  • 2 teaspoons minced garlic

  • 2 Tablespoons chopped parsley

  • ½ teaspoon ground turmeric

  • ½ teaspoon ground cumin

  • ½ teaspoon coriander

  • Salt and pepper

  • 1 cup all-purpose flour

  • Vegetable oil for frying

Method

  1. Add the mashed potatoes to a large bowl. Add the egg, garlic, parsley, turmeric, cumin, coriander, salt, and pepper, and using your hands, mix well until everything is incorporated

  2. Place the flour in a small bowl

  3. Using a spoon or a scoop, take a portion of the potato mixture, and form a ball, then flatten slightly to resemble a patty, dip in the flour to cover each side, and set aside on a plate. Repeat this until all the potato mixture is used up

  4. Heat about an inch of oil in a large frying pan, at about 350 degrees, and then place as many potato patties as possible into the oil, being careful not to crowd the pan

  5. Cook for about 3-4 minutes, then flip them over with a pair of tongs, and repeat the process until all the patties are cooked

  6. Remove the patties from the hot oil and transfer them to a paper towel-lined plate to drain

Serve warm as an appetizer, sandwich filling, or a side dish for tagine
