Navaho Stew

This delicious version of Navaho stew is made with ground beef, onions, three different types of beans, and spices and then slow-cooked to create a rich and flavorful broth. It is often served with rice and is perfect for cold days.


Navaho Stew

Ingredients

  • 1 pound ground beef

  • ½ onion, diced

  • 1 Tablespoon taco seasoning

  • 1 Tablespoon ranch dressing mix

  • 1 can pinto bean

  • 1 can black bean

  • 1 can kidney bean

  • 1 can Rotel tomatoes

  • 1 can diced tomatoes

Method

  1. In a large pot or a Dutch oven over medium heat, add the diced onion and the ground beef, and brown until the ground beef is thoroughly cooked

  2. Add the taco and ranch seasoning to the ground beef.

  3. Drain the beans and then add to the seasoned beef and stir well..

  4. Add the tomatoes to the liquid and stir well

  5. Turn the heat down to low and simmer for 1 hour.
