Penne with vodka sauce is a classic Italian dish. The pasta is cooked perfectly and combined with a creamy sauce made of heavy cream, and a splash of vodka.
Ingredients
1 package of penne pasta
3 Tablespoons of butter
1 Tablespoon olive oil
2 cloves garlic, finely chopped
1 small onion, finely chopped
¼ cup Prosciutto, small dice
2 boneless skinless chicken breasts, small dice
½ cup vodka
½ cup heavy whipping cream
¼ cup chopped parsley
Salt and pepper as needed
2 Tablespoons grated parmesan cheese
Method
Cook penne pasta according to package directions. Set aside
Heat butter and oil in a large skillet over medium-high heat
Sauté the garlic and onion, add the chicken and the prosciutto, and cook, stirring occasionally. Until the chicken is brown. Season with salt and pepper
Add the vodka, and heat over high heat
Ignite the vodka in the pan, and after the flames diminish, add the whipping cream, parsley, and a bit more salt and pepper. Bring to a boil-then reduce heat
Simmer uncovered for about 30 minutes, stirring frequently, until thickened
Add Penne pasta to the pan, stir well, and top with parmesan and more parsley
