Potatoes O'Brien
Ingredients
2 Tablespoon butter
2 Tablespoon olive oil
2 large russet potatoes, medium dice
2 red sweet peppers, medium dice
3 orange sweet peppers, medium dice
1 yellow onion, medium dice
1 clove garlic, minced
Salt and pepper to taste
Method
Dice the potatoes and put them in a bowl
Dice the onions and peppers and place in a bowl separate from the potatoes
Mince the garlic and set aside
In a large pan over medium heat, add the butter and olive oil
Add the potatoes, salt, and pepper, and stir well
Cover potatoes and let cook until soft and start turning color to a light brown
Add the pepper and onions, stir well, cover, and cook for about 10 minutes.
Add the garlic, salt, and pepper, and stir and cook for another 10 minutes without the lid.
