Ingredients
2/3 cup white wine vinegar
2/3 cup water
½ onion
1 Tablespoon Kosher salt
1 teaspoon peppercorns
1 teaspoon coriander seeds
6 jalapenos, sliced
Method
Combine all the ingredients but the jalapenos into a small saucepan and bring to a boil. Turn down the heat and simmer for 5 minutes
Put the sliced jalapenos into a heatproof jar and pour the vinegar mixture over them. Let them soak the mixture for about 30 minutes or up to 24 hours. The longer they soak the vinegar mixture, the more they soften and absorb flavor
Completely cool before covering and refrigerating
Keep these quick pickled jalapenos refrigerated for about 3 weeks
