Salmon Patties
Ingredients
2/3 cup panko
8 ounces cooked and flaked salmon
1 Tablespoon minced parsley
2 Tablespoons chopped green onion
2 Tablespoons mayonnaise
1 teaspoon lemon juice
1 teaspoon Dijon mustard
½ teaspoon Old Bay Seasoning
½ teaspoon Worcestershire
1 large egg
1-2 Tablespoon olive oil
Method
Add the salmon, 1/3 of the panko breadcrumbs, parsley, green onions, mayo, lemon juice, Dijon, Old Bay, Worcestershire, and the egg, and mix well in a large bowl.
Using wet hands, form 4 patties from the salmon and dredge them in the remaining panko breadcrumbs to cover both sides of the patties. Remove them to a plate.
In a large skillet or frying pan over medium-high heat, add the oil and shallow fry the patties in the oil for about 4 minutes on each side so the color is golden brown and hot all the way through. Be sure not to crowd the pan.
