Shrimp Pad Thai
Ingredients
8 ounces Pad Thai Noodles
2 Tablespoons fish sauce
1 Tablespoon brown sugar
1 large jalapeno, sliced
Juice of 1 lime
¼ cup olive oil, divided
2 shallots, minced
2 cloves garlic, minced
1 pound P & D medium shrimp
2 eggs
3 green onions, sliced
¼ cup chopped cilantro
¼ cup bean sprouts,
¼ cup grated carrot
¼ cup peanuts
Method
Peel and devein the shrimp, and split down the back with a paring knife, rinse and set aside
Whisk together the fish sauce, brown sugar, and the lime juice and set aside
In a skillet or wok, heat ½ the oil, add the chili, shallots, and garlic, and stir until fragrant
Add the shrimp and stir fry until they are curled and turn orange, pull from the pan and set aside
Add the remaining oil to the pan and scramble the eggs until set
Add the cooked shrimp, noodles, green onions, and the fish sauce mixture into the pan, and stir fry until heated throughout
Top with peanuts, chopped cilantro, bean sprouts, and grated carrots for garnish
