Spicy Thai Basil Tofu
Ingredients
Tofu
1 block of extra firm tofu
For the Sauce
¼ cup vegetable broth
4 Tablespoons fish sauce
1 Tablespoon soy sauce
1 teaspoon cornstarch
To Cook
3 Tablespoons olive oil
1 small red onion, diced
3 cloves garlic, minced
1 Jalapeno, small dice
4 birds' eye chilies
1 small red bell pepper, seeded and diced
1 packed cup of fresh basil
Method
Press the tofu for 10 minutes and drain any excess liquid. Afterward, you can crumble or dice the tofu and add it to a small bowl.
Mix all the sauce ingredients in a small bowl and set aside.
Heat a large non-stick skillet or a wok over medium-high heat. Add the oil, and once hot, add the red onion and sauté until translucent. Add garlic, jalapeno, and red pepper. Lower the heat to medium and sauté for 3 minutes or until the red pepper is cooked. Increase the heat, add the tofu, and cook until the tofu browns a bit, stirring as needed, for about 10 minutes.
Stir the sauce and add to the tofu; lower the heat and stir well. Add the fresh basil, mix well, and cook for about 2 minutes until the basil is wilted. Adjust the seasonings with more soy sauce.
Serve over noodles or rice.
