Stir-fried Bok Choy
Ingredients
1-pound bok choy
2 Tablespoon soy sauce
2 Tablespoons beef broth
1 Tablespoon rice vinegar
1 Tablespoon sesame oil-divided
1 teaspoon honey
1/8 teaspoon red chili flakes
2 Tablespoon vegetable oil-divided
1 Tablespoon minced garlic
2 teaspoons minced ginger
¼ cup sliced green onions
¼ teaspoon sesame seeds
Method
Rinse the bok choy with water. Dry with a paper towel. Cut in half lengthwise.
Combine the soy sauce, broth, vinegar, 2 teaspoons of sesame oil, honey, and red chili flakes in a small bowl.
Add 1 Tablespoon vegetable oil over high heat to the point of smoking in a wok or skillet.
Set the bok choy into the hot oil cut side down in one layer. Cook until lightly browned, about 1-2 minutes. Flip the bok choy over and repeat the step. Transfer browned bok choy to a plate.
Add one tablespoon of oil to the wok, add garlic, ginger, and green onions, and stir fry until fragrant.
Add soy sauce mixture to the wok and simmer until thickened.
Add the bok choy back into the wok and stir fry until the sauce glazes the greens.
Transfer to a platter and garnish with sesame seeds and the remaining sesame oil.
Perfect mix of spice and sweet. I cheated a little bit and turned my sauce into gravy mixed in some bites of eye of round.
