Stir-Fried Eggplant
Ingredients
For the Sauce
½ cup chicken broth
¼ cup dry sherry
3 Tablespoon hoisin sauce
1 Tablespoon soy sauce
1 teaspoon cornstarch
1 teaspoon sesame oil
Eggplant
6 garlic cloves, minced
3 Tablespoons vegetable oil, divided
1 Tablespoon fresh grated ginger
1 eggplant
¼ red cabbage
2 scallions, sliced
½ cup cilantro, chopped
1 Tablespoon sesame seeds
Method
Whisk all the ingredients for the sauce into a bowl and set aside
Slice the eggplant crosswise into 1-inch pieces, and add to a large bowl
Chop the red cabbage and add to a smaller bowl, set aside
Add 2 Tablespoons of the oil into a wok or large skillet and heat over medium-high heat
Add the garlic and fresh ginger and stir until fragrant
Add the eggplant and cabbage and cook for 3-4 minutes until tender, scrape to the sides to leave an open patch in the middle of the pan
Add the sauce mixture to the pan and stir into the eggplant
Cook and stir until the sauce thickens, about 30 seconds
Turn off the heat and add the scallions and the cilantro
Top with sesame seeds and serve with rice or noodles
