Taco Bell Fire Sauce

Taco Bell Fire Sauce

Ingredients

  • 1 can tomato paste

  • 3 cups water

  • 3 Tablespoons vinegar

  • ½ cup pickled jalapenos

  • 1 ½ teaspoon chili powder

  • 1 ½ teaspoon ancho chili powder

  • 1 Tablespoon dehydrated onion

  • 2 teaspoon salt

  • 1 teaspoon sugar

  • 2 teaspoon cornstarch

  • 1 teaspoon cayenne pepper

Method

  1. Combine all the ingredients in a blender and puree for about 20 seconds

  2. Put the mixture into a saucepan and bring to a slight boil, stirring all the while so not to burn the contents

  3. Bring mixture to a simmer, and continue to stir, allowing the cornstarch to thicken the mixture and the flavors to marry, around 10-15 minutes

  4. Cool completely and store in an airtight container for up to three weeks

I made this today and I must say it does taste like the fire sauce in the packets. Very easy and fun to make. So nice to try a copy-cat recipe that is actually a copy-cat and not a completely different animal. I used Bragg apple cider vinegar, McComick's chili powder, because it is just a general all-purpose chili powder. I used Embassa pickled jalapenos. I used a food processor on low setting for twenty seconds and that gave me the pin-head size chunks of jalapenos in the sauce just like in the packets. Cooked it up in a 1.5 qt sauce pan. This gave me 3x, 10 ounce hot sauce bottles each filled 2/3rds full. My challenge now is…

If your looking for the real thing, this one is darn close. I made some slight adjustments using the same ingredients, but that was to my liking. One thing I found important was to add the jalapeño at the last few seconds of blending to have it in little bits and not completely incorporated, like how it is in the packets at Taco Bell. I’ve seen this recipe copied and used by many other people using it as their own invention.
