A taco omelet is a delicious and filling breakfast dish that combines the flavors of a classic taco with the light and fluffy texture of an omelet. It typically consists of beaten eggs mixed with sautéed onions, bell peppers, and ground beef and seasoned with cumin, chili powder, and paprika.
Taco Omelet
Ingredients
1-pound ground beef
1-can refried beans
¼ cup of water
1 Tablespoon taco seasoning
2-eggs
1 Tablespoon vegetable oil or butter
1 cup Cheddar cheese
Assorted toppings of your choice: shredded lettuce, salsa, sour cream, chips, guacamole, Pico de Gallo, hot sauce, olives, tomatoes, cilantro, etc.
Method
In a large skillet over medium heat, cook and drain the ground beef
Add the can of refried beans to the cooked meat, add the water, and cover for about 5 minutes, or until beans soften up enough to mix with the meat
Add the taco seasoning and mix well. Cover and set aside
Crack the eggs in a bowl and scramble
Add the vegetable oil to a small skillet on medium heat, and add the eggs to make an omelet.
When the omelet is done. Turn off the heat, and add ½ the cheese and ¼ cup of the meat filling, close the omelet and top with the remaining cheese
Top with your favorite additions listed above
