Tater Tot Breakfast Hotdish
Ingredients
1 pound ground hot breakfast sausage
1 12-ounce bag of frozen tater tots
2 cups shredded cheddar cheese, divided
8 large eggs
½ cup heavy cream
4 jalapeno peppers, sliced
½ an onion, diced
1 clove fresh garlic, minced
¼ teaspoon each kosher salt and black pepper
Method
Preheat oven to 350 degrees F. Cook the tater tots on a cookie sheet for 20 minutes and set aside once they come out of the oven
Spray a casserole dish with food release and set aside. In a large skillet over medium heat, crumble and cook the sausage, sliced jalapenos, diced onions, and minced garlic. Once the sausage mixture is cooked thoroughly, set aside when done.
Crack the eggs into a large bowl, add the cream, half the cheese, salt, and pepper, and mix well.
Add the sausage mixture to the bottom of the casserole dish, add the cooked tater tots, top with the egg mixture, and then cover with the rest of the cheese. If necessary, mix everything before adding the cheese to ensure the egg mixture is spread throughout the casserole dish.
Bake for 45 minutes until the eggs have set and the top is golden brown
Let the tater tot breakfast hotdish rest for 10 minutes and serve warm with fresh fruit and a biscuit
