Thai Curry Beef

Thai Curry Beef

Ingredients

  • ½ pound ground beef

  • 1 teaspoon curry powder

  • 1 ½ cup coconut milk

  • 1 Tablespoon minced fresh garlic

  • 1 tablespoon fresh minced ginger

  • 1 Tablespoon Thai seasoning

  • ½ red pepper

  • ½ orange pepper

  • ½ yellow pepper

  • 7 green beans

  • ½ chopped onion

  • 2 Tablespoons soy sauce

  • 2 Tablespoons Mirin

 

Method

  1. Brown the ground beef and the chopped onion in a large skillet or wok.

  2. Add the curry powder and the Thai seasonings and mix well while the meat is cooking

  3. Meanwhile, dice the peppers and add to the pan along with the green beans, garlic, ginger, soy sauce, and mirin. Continue to cook and stir well.

  4. Add the coconut milk and let reduce until it begins to thicken, and the vegetables become soft to the bite.

Serve over rice. Makes 4 servings
