Menemen: Turkish Scrambled Eggs
Ingredients
2 Tablespoons olive oil
1 onion, medium dice
1 green bell pepper, medium dice
2 tomatoes, medium dice
3 Tablespoon Ketchup
1 teaspoon dried oregano
¼ teaspoon kosher salt
¼ teaspoon black pepper
1 teaspoon sumac powder
4 large eggs
chili flakes
chopped parsley
crusty bread
Method
In a skillet, heat the olive oil over medium heat. Add the onions and peppers and cook for about 5 minutes or until the vegetables are soft, being sure to season with salt and pepper.
Stir in the tomatoes and cook until the juice from the tomatoes is almost gone, and the tomatoes begin to soften
Add the ketchup, oregano, a little more salt and pepper, and the sumac powder and stir until the mixture starts to get a dark red color
Turn the heat to medium-low, scramble the eggs, and cook in the pan with the vegetables, gently stirring until the eggs are cooked but still soft.
Plate the Menemen and add the parsley, red chili flakes, and enjoy with a thick sliced crusty bread of your choice
