Vegan Breakfast Tacos
Ingredients
1 cup chopped sweet potato
1 cup chopped yellow onion
1 cup chopped red sweet pepper
2 Tablespoons dried basil, crushed
2 teaspoons ground turmeric
3 cloves garlic, minced
1 teaspoon dried thyme, crushed
1-pound extra-firm tofu, crumbled
¼ cup nutritional yeast
Sea salt and black pepper, to taste
Salsa
4 whole-grain flour tortillas
Method
Preheat to 350°F.
In a skillet, cook sweet potato, onion, and sweet pepper over medium heat for 10 minutes, adding water as needed.
Stir in basil, turmeric, garlic, and thyme; cook for 1 minute. Add tofu and nutritional yeast, then season.
Spread in a nonstick 15x10-inch baking pan and bake for 35 minutes until tofu is lightly browned.
Spoon the filling and salsa onto each tortilla, fold, and roll up.
