Vegan Breakfast Tacos

Start your morning off right with these delicious and satisfying vegan breakfast tacos! Packed with flavor and nutritious ingredients, these tacos are perfect for a quick breakfast or a leisurely brunch


Vegan Breakfast Tacos

Ingredients

  • 1 cup chopped sweet potato

  • 1 cup chopped yellow onion

  • 1 cup chopped red sweet pepper

  • 2 Tablespoons dried basil, crushed

  • 2 teaspoons ground turmeric

  • 3 cloves garlic, minced

  • 1 teaspoon dried thyme, crushed

  • 1-pound extra-firm tofu, crumbled

  • ¼ cup nutritional yeast

  • Sea salt and black pepper, to taste

  • Salsa

  • 4 whole-grain flour tortillas

 

Method

  1. Preheat to 350°F.

  2. In a skillet, cook sweet potato, onion, and sweet pepper over medium heat for 10 minutes, adding water as needed.

  3. Stir in basil, turmeric, garlic, and thyme; cook for 1 minute. Add tofu and nutritional yeast, then season.

  4. Spread in a nonstick 15x10-inch baking pan and bake for 35 minutes until tofu is lightly browned.

  5. Spoon the filling and salsa onto each tortilla, fold, and roll up.

Tips:

- Prepare the filling for busy mornings or make a big batch for the whole week.

- Add sliced tomatoes, onions, olives, sour cream, avocado, hot sauce, or any of your favorite additions
