Welsh Rarebit
Ingredients
2 Tablespoons butter
2 Tablespoon flour
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
½ cup Porter style beer
¾ cup heavy cream
6 ounces shredded cheddar cheese
4 slices toasted breaded
Hot sauce to taste
Salt and pepper to taste
Method
In a small saucepan over low heat, melt the butter and whisk in the flour
Continue to whisk the flour for about 2 minutes, do not brown
Whisk in mustard, Worcestershire, salt, and pepper until smooth
Add beer and whisk to combine
Pour in the heavy cream and whisk until well combined and smooth
Slowly add the cheese, whisking the whole time so the cheese melts and the sauce is smooth
Add hot sauce
Pour over toast points and serve immediately while hot
